In vanilla 7 Days to Die, changing the Daylight Length does not affect when traders open and close shop. This modlet for V1.0 and above dynamically adjusts those hours so they always open 5 minutes after dawn and close 10 minutes before dusk.
Should be compatible with mods adding new traders, even if they have weird schedules, but (obviously) not with other mods modifying vanilla trader hours.
It is recommended to also install Daylight Fix for an overall more realistic experience.
